Plant-Based, Cultivated and Precision-Fermented: The Halal Questions Food Tech Cannot Avoid

Alternative proteins promise to sidestep slaughter entirely, which sounds like a halal shortcut and is nothing of the kind. We examine the jurisprudential debates around cultivated meat, precision fermentation and plant-based analogues.

There is a persistent assumption in the alternative-protein industry that halal is a solved problem. No animal, no slaughter, no issue. Several founders have said as much in public, usually while announcing an expansion into Southeast Asia or the Gulf.

The assumption is wrong, and the reasons it is wrong are genuinely interesting: they cut to questions about what halal status actually attaches to, how substances transform, and whether Islamic law classifies a food by its origin or by its nature.

Plant-Based: Easier, But Not Automatic

Plant-based analogues are the simplest case, and even they are not automatic. The base protein (soy, pea, wheat, mycoprotein) is uncontroversial. The complications sit elsewhere:

  • Flavourings are frequently the problem. Meat-like flavour compounds are sometimes derived from animal sources, and “natural flavouring” declarations disclose almost nothing.
  • Ethanol as a carrier solvent appears throughout the flavour and colour industry.
  • L-cysteine, a dough conditioner, has historically been derived from animal hair or feathers.
  • Shared production lines running both conventional and plant-based products raise cross-contamination questions that certification bodies treat differently.
  • Alcohol in fermentation-derived ingredients used for umami depth.

There is also a live debate, mostly among scholars rather than consumers, about whether naming a product after a prohibited item is itself problematic. Whether “plant-based bacon” or “vegan pork ribs” is permissible in name has been raised by several fatwa bodies, with the dominant position being that the name follows the substance and is therefore acceptable, but the minority view has real adherents. Brands entering conservative markets have quietly renamed products in response.

Cultivated Meat: The Genuinely Hard Case

Cultivated meat, grown from animal cells in a bioreactor, is where the jurisprudence becomes properly difficult, because it does not map cleanly onto any existing category.

The central questions are these:

What was the source animal, and how were the cells taken? If the founding cell line derives from a pig, the overwhelming scholarly view is that the output is impermissible regardless of process. If it derives from a cow, whether that cow was slaughtered according to dhabiha requirements at the point of biopsy becomes decisive for many scholars. A cell line taken by biopsy from a living animal raises a separate classical question: the principle that a part severed from a living animal takes the ruling of carrion.

What is the growth medium? Historically, cultivated meat relied on foetal bovine serum, unambiguously problematic under most readings, and being phased out for cost and ethical reasons independent of halal considerations. Serum-free media are now standard in the more advanced programmes, but their components still require scrutiny.

Does transformation change the ruling? This is the deepest question. Islamic jurisprudence recognises istihalah, transformation of substance, under which a prohibited substance that has genuinely changed in nature may become permissible. The classical example is wine becoming vinegar. Whether cell proliferation in a bioreactor constitutes istihalah, or merely growth of the same substance, is contested and probably cannot be resolved by analogy to any pre-modern case.

Regulatory bodies have begun to respond. Singapore’s approval of cultivated chicken made it the first market where the question moved from theoretical to commercial, and several Gulf and Southeast Asian authorities have since convened scholarly panels. Positions issued so far tend to be conditional rather than categorical: permissible if the source animal was halal and properly slaughtered, if the medium is free of prohibited components, and if the production facility is segregated.

Precision Fermentation: A Different Shape of Problem

Precision fermentation, engineering microorganisms to produce specific proteins such as dairy casein or egg white, arguably sits in the most favourable position of the three, and this is under-appreciated.

The organism is a microbe, not an animal. Microbial products have a long history of acceptance in Islamic dietary law; the enzymes used in cheese-making are the obvious precedent, and microbial rennet is widely accepted as halal where animal rennet is contested.

The open questions are narrower and more technical: the composition of the growth medium, whether any animal-derived component was used at any stage of establishing the production strain, and downstream processing aids. These are answerable through documentation in a way that the cultivated-meat questions are not.

For companies producing dairy proteins without cows, this is a commercially significant advantage in Muslim-majority markets that has barely been articulated in their marketing.

Why This Matters Commercially

The alternative-protein sector has spent heavily on Western consumers with mixed results, and several major players have retrenched. Meanwhile:

  • Muslim-majority countries include some of the fastest-growing protein-demand markets globally.
  • The Gulf states import the overwhelming majority of their food and have explicit national food-security strategies with substantial state capital behind them.
  • Indonesia and Malaysia have both invested in alternative-protein research through state channels.

A sector looking for growth markets is standing next to a very large one, held back partly by a certification question it has assumed away rather than addressed. The companies that engage the jurisprudence seriously (early, with scholars, and with documentation designed for auditability) will reach these markets years ahead of those that treat halal as a label to apply at launch.

The Consumer Question Nobody Has Answered

Underneath the jurisprudence sits an empirical gap. Even where a product is ruled permissible, will Muslim consumers buy it?

Research on conventional food technology acceptance suggests religious permissibility and consumer comfort are related but far from identical. A ruling that cultivated meat is halal does not tell us whether a family in Jakarta or Jeddah will serve it. Early indications from general-population studies suggest that framing matters enormously, “grown from cells” and “real meat without slaughter” produce very different responses to the same product.

Almost none of this work has been done with Muslim consumers specifically, and the studies that exist are small and geographically narrow. The questions worth pursuing include:

  • How does scholarly endorsement interact with personal comfort, and does the identity of the endorsing body matter more than the ruling itself?
  • Does the tayyib concept (wholesomeness, extending beyond bare permissibility) cut for or against highly processed alternatives?
  • Do animal-welfare and environmental arguments carry weight with Muslim consumers, given the strong stewardship tradition in Islamic ethics?

That last question connects alternative proteins to a much older body of Islamic thought about the treatment of animals and the responsible use of the earth. It is a more natural fit than the industry has realised, and a more demanding one, because tayyib asks questions about processing that permissibility alone does not.
